Kozhi Molavu Varuval is a classic and popular Chettinad chicken delicacy.It is Simple to cook and good


1) Chicken-1 kg, 2) Lime-1 no 3) Ginger-garlic paste - 3 tsp 4) Turmeric powder - .5 tsp 5) Salt - As reqd 6) Coriander leaves for garnishing - .5 cup To Powder:- 7)Whole black pepper corns - 2 dsp 8) Cumin seeds(Jeerakam) - 2 dsp 9)Cloves(Grambu) - 3 nos 10)Cinnamon(Karugapatta) - 2 nos (1piece) For tempering:- 11) Oil - 3 tbsp 12) Curry leaves - 10 nos 13)Onion(large) - 2 nos(thinly sliced)

Preparation Method

1) Extract the juice from the lime and mix with ginger-garlic paste, turmeric powder and enough salt for the chickens. 2) Marinate the chicken with the above for an hour. 3) Broil(roast without oil) the ingredients listed under To Powder and powder them coarsely. 4) Heat oil in a kadai. 5) Temper with curry leaves. 6) Add the onion and saute. 7) When it turns golden brown, add the powdered spices and saute for 2 mins. 8) Add the marinated chicken pieces. 9) Fry on low heat for 5 mins. 10) Add half a cup of water and allow the chicken to cook. 11) When chicken is tender enough, keep on the heat till all the water is absorbed. 12) Continue sauting till the chicken browns evenly. 13) Garnish with coriander leaves.
